Every once in a while you just need some chocolate pudding. Well, actually I could always eat chocolate pudding if it wasn’t for the fact that most pudding is filled with artificial ingredients I don’t even know how to pronounce. So, I decided to make my own healthy version with this chocolate avocado protein pudding.
I got some ripe avocados from the grocery a few days ago with no real plan on what I wanted to do with them. I was maybe thinking I could use them for some eggs and avocado on toast or maybe some guacamole. Then I decided, why not make a delicious dessert with them?
Avocados and bananas are really the perfect fruits (yes, avocado is a fruit) to make pudding with. They both give the pudding such a creamy and rich texture. And, with the addition of natural peanut butter and maple syrup, it takes the flavor profile to a whole other level.
I think the unique flavor of this pudding is probably my favorite part. The mixture of banana, chocolate, and maple flavor is so unique and delicious. Of course, I also love the creamy texture and the fact that it is made with all healthy ingredients. I don’t think I will ever be eating store-bought pudding again!
- 2 small ripe avocados
- 1 large ripe banana
- 1 scoop (34g) Beast Sports chocolate protein powder
- 1/4 cup granulated stevia/preferred sweetener
- 1/4 cup pure maple syrup (or agave/honey)
- 2 tbsp. milk (any milk is fine)
- 6 tbsp. unsweetened cocoa powder
- 1/4 cup (64g) natural creamy peanut butter (or other nut butter such as almond or cashew)
- cinnamon to taste (optional)
- 1/2 tsp. vanilla extract
- Add all ingredients to a food processor. Blend until very smooth and creamy. Make sure protein powder is completely blended in otherwise it will be grainy.
- Taste and see if sweet enough. I found this to be plenty sweet, but depending on your taste you may want to sweeten a little more.
- Divide pudding into 5 small bowls. Top with a little drizzle of peanut butter and cacao nibs. Enjoy!
