It was so good to be back home this weekend after and awesome spring break in Florida. Even though I really enjoyed the sun and being able to ride in the warm weather, I couldn’t wait to get back home and get cooking again. I really missed eating all of my delicious protein treats that I would normally have to munch on.
My sister and brother came home from college Sunday. I went on an 80 mile bike ride in the morning and got home around 12:30. My brother still hadn’t even got out of bed when I got home! My sister and I decided that we would bake something. We usually try to bake something together when she comes home. Of course I was craving chocolate even more than normal after my long ride, so we decided on chocolate peanut butter protein cupcakes.
These are definitely the best cupcakes I have made yet. I undercooked them just slightly and the texture came out just like a brownie. The cupcakes had a really intense chocolate flavor, so if you want to tone it down a bit you can use a little less cocoa powder. I also used my Musclepharm chocolate milk combat protein powder in these. It helped give each cupcake 11 grams of protein and an awesome flavor!
Even though the chocolate cupcakes would have been good on their own, the peanut butter frosting took them to another level. I used two different kinds of peanut butter, peanut flour, greek yogurt, and stevia for the frosting. To make it simpler, you could just used one peanut butter instead of getting crazy like me! The frosting was also packed with protein just like the cupcakes because I used Nuts N More protein peanut butter.
You probably know that I always like to go overboard with toppings and flavor. Well, I did again with these cupcakes. I chopped up a Musclepharm chocolate peanut butter cup combat crunch protein bar and put it on the top of each cupcake. These bars are already my favorite protein bars out there, but add them to the top of a chocolate peanut butter cupcake and they are unbeatable.
