Wow, that is quite a mouthful isn’t it. Pumpkin Chocolate Chip Protein Cookie Dough Bars… and if I were really explaining everything about them I would call them Pumpkin Peanut Butter Chocolate Chip No-Bake Cookie Dough CBD infused protein bars! Ha! If you guys are following me on Instagram, which I’m sure most of you do if you are here (shameless plug if not —> @macro_chef), you have probably seen a lot of my daily smoothies and product I use. Well, one of them that has become a big part of my daily regimen is CBD oil.

Anyway, I started doing some research on CBD and found that there are so many benefits. One of them that I feel is the greatest for me is the help with anxiety. I often have trouble sleeping and feel anxious, and I that has gone down a ton since using CBD daily. And, it sounds kind of goofy, but if I have a protein shake with the CBD Recovery protein after a workout and also a coffee, I don’t seem to get the coffee jitters. It seems to calm me and make me quite productive when combined with the caffeine from my beloved iced coffee.
Now, to the actual recipe haha! These are some no-bake pumpkin chocolate chip protein bars. They are really easy to make, packed with protein, and of course super delicious. I used peanut flour and coconut flour in them in addition to the protein powder to make the base. It turned into a cookie dough like texture which was AMAZING! Of course, this could be used with a regular whey protein powder as well if you don’t have the CBD protein.
Pumpkin Chocolate Chip Cookie Dough Protein Bars

Serves: 8 bars
Healthy, protein-packed, pumpkin chocolate chip no-bake protein bars infused with a delicious cookie dough texture make for the perfect guilt-free decadent treat any time of the day.
Ingredients
- 1 cup peanut flour
- 1 cup canned pumpkin purée
- 1/2 cup coconut flour
- 1 container (150g) vanilla Greek yogurt

- 1/4 cup mini chocolate chips
Instructions
- Mix all ingredients in a large bowl. It will be a thick, almost cookie dough like texture.
- Press into a medium Tupperware container or pan. Refrigerate for a few hours then slice into 8 bars. Enjoy!
