I have been lacking some posts these past few days because I am out in Arizona for a cycling race! But, I made sure to make a couple extra recipes before I left and these berry protein oatmeal bars are one of them.
I pretty much eat oatmeal everyday, but I rarely bake it. I have to say, I almost like baked oatmeal better. Almost. However, I’m pretty much happy with oatmeal now matter how it is prepared. These baked oatmeal bars were a nice change to my typical morning oatmeal. They are awesome for a grab and go breakfast when you are in a hurry!
The flavor is a perfect combination of oats, berries, and vanilla. They aren’t too sweet, but just the right amount to compliments the tartness of the berries. After baking them and cutting them into squares, I topped mine with a little bit of vanilla Greek yogurt for a nice creamy sensation on top!
Berry Protein Oatmeal Squares

These healthy and delicious berry protein oatmeal squares have an awesome cake-like texture and make for the perfect grab-and-go breakfast!
Ingredients
- 2 cups old fashioned oats
- 1 scoop (34g) Beast Sports vanilla protein powder
- 1 tsp. cinnamon
- 1/4 tsp. baking powder
- a few pinches of salt
- 1/2 cup Greek yogurt*
- 2 whole eggs
- 1/2 cup + 2 tbsp. milk (I used unsweetened almond)
- 2 tbsp. coconut oil (melted)
- 1/4 cup stevia/brown sugar baking blend**
- 1 tsp. vanilla extract
- 1 cup frozen mixed berries
Instructions
- Preheat oven to 350F. Mix oats, protein powder, cinnamon, baking powder and salt in a large bowl. In a separate bowl, whicks together yogurt, eggs, milk, melted coconut oil, brown sugar, and vanilla extract.
- Add wet ingredients to dry. Gently fold together until evenly combined. Stir in frozen mixed berries.
- Line an 8×8 square cake pan with foil. Spray with nonstick spray. Bake for 20 minutes or until a knife comes out clean.
- Cut into 12 squares and enjoy!

* Greek yogurt can be substituted for mashed banana, canned pumpkin puree, or applesauce. It can also be substituted for any other type of yogurt.[br]** Stevia/brown sugar baking blend can be substituted for 1/2 cup of regular brown sugar.
