I was struggling to find some of my muffin and donut pans tonight after we cleaned things out around the kitchen. What I did find was the protein/energy bar pan that my mom bought me a while ago. So, I opted to make some cinnamon roll baked protein bars.
Typically, things always taste better once they are finished and baked. When I tasted the batter and it already tasted delicious, I knew these would be amazing. I wasn’t really sure how the texture would come out because I have never really used the protein bar mold before. But, they came out with a dense cake texture that is awesome.
My brothers girlfriend loved these. She said they tasted like a cinnamon roll, so that it obviously where the name came from. The cinnamon flavor was enhanced by the snickerdoodle PES protein powder that I used. You could also use cinnamon protein, or even vanilla. I’m sure they will be delicious no matter what!
Cinnamon Roll Protein Bars

Baked protein cake bars with a warm cinnamon flavor and drizzled with icing to make the perfect healthy cinnamon roll protein bar.
Ingredients
- 1/2 cup (60g) whole wheat flour
- 1 1/2 scoops (45g) cinnamon/snickerdoodle protein powder
- 1 tsp. cinnamon
- 1/2 tsp. baking powder
- 1 whole egg
- 1 egg white
- 2/3 cup (150g) vanilla Greek yogurt
- 3 tbsp. milk (any milk is fine)
- 2 tbsp. granulated stevia/preferred sweetener
- 1 tbsp. honey (or agave)
- 2 tbsp. powdered sugar
- 1 tsp. milk
Instructions
- Preheat oven to 350F. Mix flour, protein powder, cinnamon, and baking powder in a bowl. In a separate bowl, mix egg, egg white, Greek yogurt, stevia, and honey. Combine wet and dry ingredients and gently fold together until smooth.
- Spray a protein/energy bar mould with nonstick spray. Spoon the batter evenly into 8 spots in the mold. If you don’t have one, you could also make 4-6 muffins. Bake for 15 minutes.
- Mix powdered sugar with 1 tsp. milk. Drizzle over top of bars. Enjoy!
