I came home from work tonight craving a peanut butter and jelly sandwich. So, I did what any normal person would do. I decided to make some PB&J protein blondie bars. They definitely satisfied my itch for this classic and delicious flavor.
When I bite into these, I literally feel like I am eating a peanut butter and jelly sandwich. Except these babies are also packed with protein. And not to mention the amazing blondie texture. This is like taking a brownie and mixing it with peanut butter and jelly. What is not to love about that?
Each one of these blondies has as much or more protein than a typical protein bar. Yes, thats right. There are 14 grams of protein in each. I don’t know about you, but I would much rather eat a peanut butter and jelly flavored blondie than a bland protein bar any day. All that protein is thanks to the 2 scoops of Beast Sports vanilla protein I used.

Healthy, dense, and delicious peanut butter protein blondies topped with a swirl of strawberry jam. Each blondie has 14 grams of protein!
Ingredients
- 1 cup (120g) whole wheat flour
- 2 scoops (70g) Beast Sports vanilla protein powder
- 1/4 cup + 2 tbsp. granulated stevia/sweetener
- 3 tbsp. (18g) peanut flour
- 1/2 tsp. cinnamon
- 1/2 tsp. baking powder
- 2 whole eggs
- 1/4 cup (64g) natural creamy peanut butter
- 2/3 cup (150g) vanilla Greek yogurt
- 1/4 cup milk (any milk is fine)
- 1 tsp. vanilla extract
- 1/4 cup (80g) natural strawberry jam
Instructions
- Preheat oven to 350F. Mix flour, protein powder, stevia, peanut flour, cinnamon and baking powder in a large bowl.
- Add peanut butter to a separate bowl and heat in microwave for about 15-20 seconds. Add eggs, Greek yogurt, milk, and vanilla extract. Whisk together until smooth.
- Combine wet and dry ingredients. Gently mix together until combined. Line a 6×8 baking dish with foil/parchment paper and spray with nonstick spray. Pour batter into baking dish.
- Spoon strawberry jam into different spots on top of the batter. Swirl jam into the batter. Bake for 15-18 minutes or until a knife comes out clean.
- Let cool. Cut into 8 bars and enjoy!
