During all my downtime staying at home during out current Coronavirus situation, I am using the time to get creative in the kitchen. I found some angel food cake mix in the cabinet, and decided to make it into a mixed berry angel food protein cake.
I actually made it a MIXED BERRY ANGEL FOOD CAKE PROTEIN LOAF.
Angel food cake is good on it’s own, but it really needs something on top to enhance the flavor and add a little moisture. So, I did two things: a protein peanut butter cream icing and a mixed berry jam.
Protein Peanut Butter Icing
For the icing, I mixed nonfat Greek yogurt, peanut flour, vanilla protein powder, and sugar free Swerve powdered sweetener. It is amazing. So creamy, and protein-packed. The protein I used was this vanilla whey protein, which is actually a bit of a blended protein. It uses a little bit of casein which makes it have a great consistency. The sweetener is also important. I used Swerve powdered, which is basically like powdered sugar but sugar free!
Mixed Berry Jam
The jam was really simple with just 3 ingredients: sugar free maple syrup, frozen mixed berries, and chia seeds. Add the mixed berries and sugar free syrup to a microwave safe dish, microwave for 30-60 seconds to melt the berries. Then add the chia seeds and let sit in the fridge to thicken. I should have made extra to top some of my protein pancakes with or even oatmeal recipes.
And yes, I know many might be wondering why I’m using box cake mix. But hey, desperate times call for desperate measures. This cake uses only about 1/2 of the box mix, and is loaded with protein and fiber. Perfect simple, healthy, and delicious take on angel food cake.
