There is something so soothing about a nice warm piece of this pumpkin chocolate chunk banana bread straight out of the oven. It is especially good since it has been freezing and snowing this weekend in Colorado. I am out here doing some cycling training, but that hasn’t stopped me from baking!
After baking this bread, I was kind of surprised at how delicious it was. I mean, of course I didn’t think it would be bad or anything. But, I can’t believe how delicious chocolate chunks, banana and pumpkin all go together. It is amazing!
The best part about the bread is how moist it is. The use of pumpkin puree and mashed banana is the perfect storm for a moist and delicious bread. It is cool because you don’t need to use a lot of fat. The pumpkin and banana take the place of it.
And, of course the bread is not only tasty, but it is also packed with protein. I used my Beast vanilla protein which you can find here for an awesome price!
Pumpkin Chocolate Chunk Banana Bread

This pumpkin chocolate chunk banana bread is not only the most moist and delicious bread, but it is also packed with protein and healthy ingredients.
Ingredients
- 1 cup (120g) oat flour
- 1 scoop (34g) [url href=”http://www.competitivesupps.com/collections/vendors?q=Beast Sports&rfsn=193490.3f06.12341″ target=”_blank”]Beast Sports vanilla protein powder[/url]
- 1 tsp. baking powder
- 3/4 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 2 ripe bananas, mashed
- 1 cup (240g) canned pumpkin puree (NOT pumpkin pie filling)
- 2 whole eggs
- 1/4 cup stevia/sugar baking blend*
- 1/4 cup granulated stevia/erythritol**
- 1/2 tbsp. vanilla extract
- 2 tbsp. (28g) dark chocolate chunks
- 2 tbsp. (28g) milk chocolate chunks (or more dark chocolate)
Instructions
- Preheat oven to 350F. Mix flour, protein powder, baking powder, baking soda, cinnamon, and salt in a large bowl. In a separate bowl, mix together mashed banana, pumpkin, eggs, stevia/sugar blend, granulated stevia, and vanilla extract.
- Combine wet and dry ingredients. Gently fold together until a smooth batter forms. Be careful not to overmix. Add chocolate chips, leaving a few extra for the top. Stir in chocolate chunks.
- Spray a 4×8 in loaf pan with nonstick spray. Spoon batter into pan. Sprinkle top with remaining chocolate chunks. Bake for about 35 minutes or until a knife inserted comes out clean.

* If you don’t have the stevia/sugar baking blend, sub with 1/2 cup regular granulated white or brown sugar.[br]** If you don’t have this, sub for above stevia/sugar baking blend or 1/2 cup regular sugar. But, it will give the recipe more sugar.
