I pretty much had to make this recipe. When you have a bunch of extra ripe bananas laying around, you simply can’t NOT make some sort of banana bread. So, I did what any rational person would do and made these peanut butter chocolate chip banana bread bars!
I have actually been eating these on my training rides lately. They are super easy to wrap a couple in foil and toss in my jersey pocket. And…. they taste amazing so that is an extra little benefit. It’s like a little treat after they have warmed up a bit from the sun and my back. I know, it sounds weird, but when they are warm and the chocolate starts to melt a little they are fantastic.
Anyway, back to the peanut butter chocolate chip banana bread bars and not my cycling! Recently, Naked Nutrition send me over some of their powdered peanut butter to use. I figured this was the perfect opportunity to use it in a recipe.
I like it because it gives the delicious peanut butter flavor without all the added fat and calories from regular peanut butter. It also took the place of the protein powder that I put in most recipes since it has 6g per 2 tbsp. and only 50 calories.
The bars came out absolutely awesome. They are moist, filled with decadent chocolate chips, and have the perfect combination of sweet warm banana bread flavor and salty peanut butter. Mmmm I am craving more of them right now, but unfortunately I have eaten the whole batch in the last couple days. I guess that just gives me an excuse to make more?!?
