PB&J Protein Lava Cake

To me, there is just something about summer and peanut butter and jelly that goes together. Maybe it was the fact that I’d eat PB&J as a kid between playing outside all day, or maybe just the fact that I really love peanut butter and jelly. I figured I would put the OG combo together into a protein cake form with this PB&J Protein Lava Cake.

Yep, you heard that right. PB&J Protein Lava Cake

I wasn’t initially planning on making it a lava a cake, but as I was microwaving it, I noticed the center was still undercooked. So, I scooped out some of the batter from the center, put a few spoonfuls of raspberry jam in the middle, then put the uncooked batter back over it. Back into the microwave to finish the cooking time and BAM!We had a PB&J Protein Lava Cake.

Sometimes the things which are unplanned end up being the best recipes. As you all probably know, I love gooey, fudgy desserts, and this cake has just that type of center.

For the Cake

Quick note about protein powder choice

It is best to use a blended protein here. Pure whey protein will dry out very quickly in the microwave which is not a pleasant texture for a lava cake. I, of course, recommend my Macro Supps ONE Protein, which is what I truly believe the BEST baking and recipe protein on the market!

For the Frosting

I made a peanut butter cream frosting to put on the outside of the cake. It is really super easy and just a few ingredients: Greek yogurt, peanut flour, Swerve confectioners sweetener, creamy peanut butter, and some almond milk. You can omit the creamy peanut butter and add extra peanut flour for less fat, but there is just something about the taste of regular peanut butter that you can’t get with peanut flour. I used my favorite Fokken Nuts creamy peanut butter in this one.

For the Peanut Butter Ganache

This honestly might be the best part of the whole cake. I am a sucker for rich, decadent flavors. This ganache is definitely not the most calorie friendly, so you can skip it if you want, but trust me it is amazing. I heated up some Reese’s peanut butter chips with Fokken Nuts creamy peanut butter, mixed it all together, and drizzled over the top of the cake. As it cools it gets firmer like a ganache, but is super creamy and full of flavor.

Finally, Raspberry Jam on Top

There really is no special homemade jam recipe here unfortunately. I just used some natural raspberry jam I had at home and put a big spoonful on top. Because it wouldn’t be a peanut butter & jelly without the jam!

I hope you guys enjoy this one. And, of course, it doesn’t have to be national PB&J day to enjoy PB&J. That is one of the things I love about peanut butter and jelly, it is good anytime of the week, and any time of day! I often make a few PB&J’s to stuff in my jersey pockets on long training rides!
