These are called chocolate peanut butter fudge truffles for a few reasons. One of them is because I was planning on making fudge when I started making them. And the other reasons is, well, they have the taste and texture of fudge. Funny how that works, right?
To make these, I used some Peanut Butter Co. chocolate peanut butter and peanut flour for the delicious peanut butter flavor. Then, to add to the chocolate flavor, I added some cocoa powder. They get their fudge-like texture from both the peanut butter and the coconut oil. It really is quite tasty!
One of the fun parts about these are the fact that you can pretty much customize them however you want. I rolled my truffles in cocoa powder, peanut flour, chocolate sprinkles, and christmas sprinkles. You can do what I did, or for even more flavor, you could dip them in melted chocolate. Ahh, the possibilities are endlessly tasty.
Healthy Chocolate Peanut Butter Fudge Truffles

These healthy chocolate peanut butter fudge truffles have an amazing fudge-like texture combined with the perfect combination of chocolate and peanut butter flavor.
Ingredients
- 3/4 cup chocolate peanut butter (I used this one)
- 5 tbsp. coconut oil
- 1/4 cup pure maple syrup*
- 1 cup peanut flour
- 1/4 cup unsweetened cocoa powder
Instructions
- In a large microwave safe bowl, add coconut oil and chocolate peanut butter. Microwave for about 45 seconds until peanut butter and coconut oil are melted. Mix until smooth.
- Add peanut flour and cocoa powder. Mix again until smooth. Finally, add maple syrup and stir in until combined.
- Place dough in fridge for about 10 minutes to set up a little. Once chilled, roll into about 25 small truffles.
- Now, you can get creative. I rolled some of the truffles in cocoa powder, some of them in peanut flour, and some of them in sprinkles. I decided to go with both chocolate and christmas sprinkles for fun. Enjoy!

*You could sub honey or agave for the maple syrup. I am not sure if sugar free maple syrup would work or not.
