I posted a picture of this a while ago and said the recipe would be coming soon, well here it is! PROTEIN BROWNIE BATTER! You all know that I can’t resist anything involving brownies, or chocolate, or both!
The great part about this PROTEIN BROWNIE BATTER is that there is no raw flour or egg, so no cooking required. Get all the delicious decadence of brownie batter in just minutes, and WITHOUT any of the guilt of normal sugary, high fat brownie batter.
Protein Brownie Batter
Key Ingredients
Canned Pumpkin Puree
I know it sounds weird, but don’t knock it until you try it. You don’t taste the pumpkin and it adds an amazing creamy texture and volume with barely any calories. And, of course you can’t go wrong with the fact that it is super high in Vitamin A and fiber and has 0 grams of fat.
Peanut Flour
I used this to help give it that cookie dough, brownie batter texture. I didn’t want to use flour because of all the extra carbs and raw flour does not taste very good. Cocoa Powder + Chocolate Protein Powder
Of course you can’t have the amazing brownie flavor without some high quality chocolate flavor. I used unsweetened cocoa powder as well as the Chocolate Brownie ONE protein powder.
Swerve Confectioners Sweetener
By now you have probably seen that I use Swerve sweetener in a ton of my recipes. I love it because it measures 1:1 with sugar but doesn’t have any calories or glycemic effect. In this one I used their confectioners sweetener so that it mixed in nicely with the batter and didn’t leave a crunchy granular sugar texture.
High-protein, low-fat, low-sugar
You really can’t beat the macros on this one. For a 3tbsp (52g) serving, there are only 100 calories and 10 grams of protein. I don’t know about you, but I’d take some protein brownie batter over a protein bart any day!
If you are like me, you can even get a bit crazy with this one. Just the other day I made another batch of this and used it to make a protein brownie batter quesadilla!
Delicious as a spread / topping
And, you can’t beat it as a spread / topping for toast, rice cakes, and just about anything that you’d normally add a nut butter to.
