Tomorrow is the last day of racing here in New Mexico. It will be nice to be back home and get back to my baking ways for a while until the next race! These are some PB&J thumbprint cookies that I made before leaving. I really wish I had some of them here with me!
It was my first time ever making thumbprint cookies. Wow. I think I have fallen in love with them. Everyone loves a good peanut butter and jelly sandwich. But, I think the combination might be even better in a cookie.
The cookies are some delicious peanut butter protein cookies. If you don’t want to make them with protein, you can just use extra flour instead. Then I made a thumbprint in each of them and filled them with some scrumptious strawberry jam.
