It has been a crazy and really fun year so far. Since the first of the year, I have spent more time in Tucson, AZ than I have spent back home in Indiana. It has been amazing. The weather and terrain in Tucson is perfect for training. However, I just got back to Indiana last night and was really excited to make some more recipes. I opted to go with Apple Peanut Butter Protein Cookies because who doesn’t love cookies???
Cookies have always been my weak point. Not that I can’t make them, but it always seemed in the past that cookies were the hardest thing for me to make. It’s hard to make a cookie with protein powder that still has a good texture and isn’t dried out. But, I think I nailed it with these cookies. There is coconut oil to help keep them moist as well as chunks of juicy apple.
I used my Beast Sports Nutrition vanilla protein powder in them as well. It helped give the cookies an amazing flavor while also giving them a boost of protein. The flavors that are going on are so delicious. When you bite into it, you get cinnamon, vanilla, apple, and peanut butter flavors all at once. And, the moist chunks of apple inside the cookies give them the perfect texture!
Apple Peanut Butter Protein Cookies

Healthy and delicious peanut butter oatmeal protein cookies filled with juicy chunks of apple and with an awesome cinnamon flavor.
Ingredients
- 1 cup (120g) oat flour
- [url href=”http://bit.ly/1qX9BcA” target=”_blank”]1 scoop (34g) Beast Sports vanilla protein powder[/url]
- 1 cup (80g) old fashioned/rolled oats
- 1 tsp. cinnamon
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 cup (56g) coconut oil
- 6 tbsp. (96g) natural creamy peanut butter
- 1 whole egg
- 1/2 tbsp. vanilla extract
- 1/4 cup (48g) stevia/sugar baking blend*
- 1 large apple, cubed into small chunks
Instructions
- Preheat oven to 350F. Mix flour, protein powder, oats, cinnamon, baking powder, and baking soda in a large bowl. In a separate bowl add coconut oil and peanut butter. Heat for about 15 seconds or until coconut oil is melted. Mix together until smooth. Add egg, vanilla extract and stevia/sugar blend. Mix.
- Combine wet and dry ingredients. Gently fold together until combined. Add apple and stir in. The batter should be a thick cookie dough consistency.
- Spray a cookie sheet with nonstick spray. Scoop about 11 medium sized cookies onto the baking sheet. Bake for 10 minutes. Let cool and enjoy!

* If you don’t have stevia/sugar baking blend, you can use 1/2 cup regular granulated sugar or coconut sugar.
