Birthday Cake Cookie Dough Protein Bars
There are a few secret ingredients in here that make these hands down the best cookie dough bars you will ever try. Trust me. My taste buds have been around the protein cookie dough block a time or two, and I am quite confident in this recipe.

Chickpeas / Garbanzo beans
The next key to the perfect protein cookie dough texture is using garbanzo beans or chickpeas. Trust me, don’t knock it until you try it. Similar to my black bean brownie recipes, the beans give the perfect texture and add protein and fiber.
The ONE Protein and garbanzo beans are what make this recipe so good. Seriously, do not swap them out!
So, now we get to the top chocolate peanut butter layer. Of course, it is optional but why leave out chocolate and peanut butter if you don’t have to?
Chocolate Peanut Butter Ganache
The final touch on top is the chocolate peanut butter ganache layer. It uses just a few ingredients, but is packed with protein and chocolate peanut butter flavor
- Melted dark chocolate
- Peanut flour (PB Fit)
- Chocolate brownie ONE Protein
- Milk or water
Just mix the peanut flour, protein powder, and milk/water until a creamy smooth mixture forms. Then add melted dark chocolate and mix again. Spread over top of the cookie dough bars, let chill, and then enjoy!
