These cookies came into my mind this weekend. I was going to make them Sunday, but then it got too late. Then I was going to make them Monday night, but that didn’t end up happening. So, finally last night I got around to making them and I am so glad I did. These peanut butter marshmallow protein cookies are the bomb!
The cookies are really so simple to make. All you need is peanut butter, protein powder, eggs, brown sugar, and vanilla extract which is optional. Mix it all together, roll onto balls, flatten out, fill with a couple mini marshmallows, form back into a ball, and bake! That is one thing I love about these cookies. They are simple. Recipes that taste great are one thing, but making them simple and delicious the best.
I used a couple different types of peanut butter. One was Nuts ‘N More chocolate protein peanut butter and the other was Buff Bake white chocolate protein peanut butter. Of course, pretty much any type of peanut butter would work. Almond butter, cashew butter, or hazelnut butter would delicious too! I might have to make this recipe again and experiment with different nut butters.
Peanut Butter Marshmallow Protein Cookies

Delicious chewy peanut butter protein cookies filled with gooey marshmallows. Each cookie has 12 grams of protein!
Ingredients
- 3/4 cup (190g) peanut butter*
- 1 scoop (34g) vanilla whey protein powder
- 1 scoop (30g) vanilla casein protein powder
- 1/4 cup (48g) stevia/brown sugar baking blend**
- 2 large whole eggs
- 1 tsp. vanilla extract
- 1/2 cup (30g) mini marshmallows
Instructions
- Preheat oven to 350F. Add all ingredients except for marshmallows to a bowl. Mix until well until a thick cookie dough forms. May need to heat up peanut butter slightly to soften it to it can be mixed easier.
- Scoop cookies evenly into 11 cookie dough balls. Flatten each cookie and place a couple mini marshmallows in the middle. Form dough back into a ball around the marshmallows. Repeat for the remaining cookies.
- Place cookies on a baking sheet lined with parchment paper. Flatten cookies slightly. Bake for 4-5 minutes at 350F. Cookies may seem a little soft, but they will harden once cooled.

* I used protein peanut butter to boost the protein in the recipe. Any peanut butter, or nut butter will be fine to use. [br]** If you don’t have the stevia brown sugar blend, you can use 1/2 cup regular brown sugar.
