Wow, I really can’t believe it is already the middle of December. The school semester has flown by. It felt like yesterday that it was 90 degrees in August and things were just getting going. Now, it’s cold and Christmas is here! I’m getting into the Christmas spirit with these Peppermint Chocolate Chip Mini Muffins/Cookies.
You might be wondering why I put muffins/cookies. Well, I wanted to make cookies, you know those Hershey’s kiss blossom ones? Then I realized I didn’t have a cookie sheet, so I improvised and went with some mini muffins. They are absolutely delicious either way!
Like I mentioned, the inspiration behind these are the Hershey’s peanut butter blossom cookies which are typically a peanut butter cookie topped with a Hershey’s kiss. I changed it up to make it healthy, protein packed, and of course festive for the holidays.
These are a peanut butter chocolate chip base that I topped with a peppermint Hershey’s kiss. As always, you can’t go wrong with chocolate chips and peanut butter and then the peppermint kiss on top added the perfect touch of decadence and holiday festivity. These are perfect for any of your Christmas parties this year that you want a delicious treat, but also want to keep it healthy!
Peppermint Chocolate Chip Protein Cookie Muffins

These mini peppermint chocolate chip protein cookie muffins are the perfect healthy, indulgent holiday treat when you have the craving for something sweet with hints of peanut butter, chocolate and peppermint all wrapped into one delicious treat.
Ingredients
- 1 scoop Ascent native fuel vanilla whey protein powder
- 1 scoop Ascent native fuel vanilla casein protein powder
- 2 tbsp. coconut flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup natural peanut butter
- 2 whole eggs
- 1/4 cup coconut oil (or butter), melted
- 1/4 cup Truvia baking blend
- 2 tbsp. mini chocolate chips
- 20 peppermint Hershey kiss candies
Instructions
- Preheat oven to 350F. Add all ingredients except for chocolate chips and peppermint Hershey’s to a food processor. Process until a thick batter forms and all ingredients are well incorporated. Add chocolate chips. Pulse until they are distributed evenly throughout the batter.
- Add the batter to a mini muffin pan filling 20 spots. Alternatively, roll into 20 balls to make cookies. Bake for a few minutes, take out of the oven, press a peppermint Hershey kiss on top of each and finish baking for a few more minutes. About 5-6 minutes total. If you bake too long, they will dry out easily.
- Once done baking, let cool and enjoy!
