Wow, yeah that title is a mouthful. But, it’s a mouthful of absolutely amazing, dense, warm, bread pudding protein cake gainzzzzz! I kind of went a little wild with this Apple Pie Bread Pudding Protein Cake, and I am so glad I did. It turned out amazing!
I think bread pudding has to be my favorite dessert. I don’t really know 100% when it started to be my favorite, but every time I get it, I tend to eat myself sick on it. With this recipe, I wanted to be able to eat a good slice of it and not feel like I do when I eat the typical, sugar and fat loaded bread pudding.
For fun, here is a picture of me in Belgium with a huge slice of bread pudding cake, which I’m sure had to be about 2000 calories.
It’s ok though, because the next day I rode my bike 200 miles from Belgium, into France, back to Belgium, into the Netherlands, and then finally back home to Belgium. It was the longest ride I have ever done! Check out the epic ride below from Strava!

Anyway, back to the star of the show which is the Apple Pie Protein Bread Pudding Cake! I’d say the inspiration came from the above photo of the dense bread pudding cake I had in Europe. It is kind of funny, for this recipe, rather than actually using bread, I ended up using some low fat biscuits. Wow, best decision ever!
The main way to give this recipe amazing apple pie flavor was to use the BSN Syntha-6 Apple Pie a la Coldstone flavor. It seriously tastes just like apple pie and I have no idea how they do it. Then, of course the biscuits, apples, and wet ingredients were added to make it all come together!
After the cake was baked, I figured that every good cake or bread pudding has some sort of sauce/topping. I went for an almond butter caramel sauce. Of course you could use peanut butter instead. Heck, you could also sub the caramel sauce for maple syrup. All of them would be amazing! To keep the calories a bit lower, I used my favorite sugar free caramel sauce.
