With how much I love coffee and chocolate, of course I gotta combine the two! According to my dad, these were the best brownies I’ve made. Trust me, he would tell me if they were bad (he has told me that before haha!). Anyway, yes. Cappuccino chocolate chip protein brownies. Pretty much pure bliss if you ask me.
You may or may not know, but Ascent just came out with their cappuccino flavored casein protein. They already have a cappuccino whey, and now the casein! I love using casein when baking, especially in brownies, because it helps lend to a dense, more moist and fudgy texture of the brownie. Nothing better than a good fudgy brownie if you ask me.
I sort of followed one of my typical protein brownie recipes using black beans. Now, before you say “gross”, here me out. You don’t taste the black beans one bit. They add extra protein and fiber. And, it allows you to use absolute NO flour at all. So, if you are gluten intolerant, black bean brownies are perfect. Or, if you are just wanting something healthier, lower carb, and fiber packed, they are also perfect.
For the coffee flavor, of course I added the cappuccino casein protein. You can try whey if you’d like, but I wouldn’t recommend it. Whey tends to dry out more and bake much differently than casein protein. I also added a shot of espresso to give it even more of a coffee/cappuccino flavor. You can use decaf, or regular depending on how much caffeine you like! I know you guys will love these as much as I did!
- 1 can black beans, drained and rinsed well
- 2 scoops [url href=”http://bit.ly/MacroChefMCC” target=”_blank”]Ascent cappuccino casein protein[/url]
- 1/2 cup Truvia baking blend*
- 1/4 cup coconut oil
- 1/2 cup milk (I used unsweetened almond)
- 1 container (150g) vanilla Greek yogurt
- 1 shot espresso, cooled (decaf or regular)**
- 3/4 cup + 2 tbsp. unsweetened cacao powder
- 1 tsp. baking powder
- 1/4 tsp. salt
- dark chocolate chips for topping
- Preheat oven to 350F.
- Add all ingredients to food processor except for chocolate chips. Process until a thick, smooth batter forms. Make sure all black beans are blended well and there are no chunks. May need to scrape down the sides of the food processor to a couple times to ensure everything gets blended well.
- Line a 9×9 baking dish with foil. Spray with nonstick spray. Use a spoon or spatula to pour batter into the pan and spread evenly. Sprinkle with dark chocolate chips.
- Bake for 20 minutes uncovered, then converted with foil and bake for another 5-7 minutes or until a knife comes out clean. Slice into 12 brownies and enjoy.
