I had a cyclocross race yesterday and it wasn’t until 2:15 so I had plenty of time to sleep in and then make this delicious recipe. Honestly, days like yesterday are the best. Getting extra sleep, making cookie dough protein brownie bites, and racing my bike are definitely awesome ways to spend my Sunday. And it was even better because I got 3rd place in the race. Two guys and myself were ahead by almost a couple minutes and I was just edged out by them. I’ll take it considering I was probably the youngest in the race.
Last week I received a few Mission protein bars from MuscleTech. They are high fiber and basically the same texture as quest bars, but they have only natural ingredients and are sweetened with stevia. I used the chocolate brownie flavor in this recipe.
You really can’t beat a recipe that is as simple, quick, and delicious as this. They literally only take like 5 minutes to make. And, there is only about 5 or 6 ingredients. So, what the heck are you waiting for? Go satisfy your sweet tooth with this amazing combination of brownie and cookie dough.
Cookie Dough Protein Brownie Bites

Serves: 5 bites
Decadent chocolate brownie protein bar formed into brownie bites and topped with gooey snickerdoodle protein cookie dough.
Ingredients
- 2 tbsp. (14g) coconut flour
- 1/2 scoop (17g) vanilla whey protein powder
- 1 tbsp. granulated stevia or erythritol
- 2 tbsp. (30g) vanilla Greek yogurt
- 1 tbsp. pure maple syrup (or sugar free)
- 1 tbsp. (15g) dark chocolate chips
- 1 chocolate brownie fiber protein bar (MuscleTech Mission, Quest, B-Up, etc.)
Instructions
- Heat protein bar in microwave for 10-15 seconds or until soft. Cut into 5 pieces. Spray a mini muffin pan with nonstick spray. Press each protein bar piece into 5 separate spots in the bottom of a mini muffin pan.
- Mix together all remaining ingredients in a small bowl to make cookie dough. Cookie dough will be very thick and kind of sticky.
- Divide the cookie dough between the 5 mini muffin spots and press it in on top of the protein bar pieces.
- Heat up for about 10 seconds in the microwave to make the brownie soft before eating. Enjoy!
