Yes, it is another recipe with chocolate and pumpkin. You already know how obsessed I am with chocolate, and we are peak pumpkin season. Or, at least I think it is peak pumpkin recipe season all the way up until Thanksgiving. So yes, the is a pumpkin chocolate chip protein coffee cake because why not?
This is an interesting one because I actually made it a little different than I normally do recipes. I had a box of yellow cake mix sitting around that I figured why not make it into a protein cake?
I am not going to lie, I actually really liked how it turned out using the box cake mix. It already had all the necessary sweetener, flour, and leavening agents. All I had to do was add protein powder and a few other things!
For the protein powder, I used a cappuccino flavor from Ascent Protein. I used 2 scoops of cappuccino whey, and 2 scoops of cappuccino casein (or vanilla). I like combining whey and casein because whey alone tends to dry out. I used the cappuccino flavor because its coffee cake! Some coffee was added to the batter as well for that delicious coffee flavor.
The cake you see here pictured I actually made in a round baking dish. The other portion of the batter I made in a separate dish since I didn’t have two round dishes.
Anyway, I finished the cake off with a chocolate protein peanut butter sauce. The sauce consisted of cappuccino whey, cocoa powder, peanut butter and some almond milk. Lastly, I added a dollop of whipped cream and a sprinkle of cinnamon.
