I am saying it yet again. I really cannot believe how warm it is in the middle of December. I’m pretty sure it had to be some sort of record yesterday. I’m pretty sure it was almost 70 degrees. I never thought I would be able to ride with shorts and short sleeves in December. It felt amazing to not have to wear a hat gloves, jacket, and warm pants while riding. I swear it was probably 20 degrees this time last year.
However, I did do something other than ride my bike today. I had to get busy in the kitchen and try out some of the Muscle Tech platinum whey protein powder I received from them a few days ago. I used it as well as some casein protein in these muffins to give each one about 12 grams of protein.
The nice part about using vanilla protein powder as a base is that almost any flavor combination can be added to it. I’m not even sure where the white chocolate maple idea came from. I just found some different things in the pantry and decided to put them together. And…they turned out amazing!
Maple White Chocolate Chip Protein Muffins

Serves: 8 muffins
Moist and fluffy maple protein muffins filled with white chocolate chips. These protein muffins pack 12 grams of protein making them the prefect healthy and delicious snack!
Ingredients
- 1 1/4 cup (150g) whole wheat flour
- 1 scoop (31g) vanilla whey protein powder
- 1 scoop (34g) vanilla combat protein powder
- 6 tbsp. granulated stevia or erythritol
- 1 1/2 tsp. baking powder
- 1 tsp. cinnamon
- 1 cup (227g) vanilla Greek yogurt
- 1 whole egg
- 1/4 cup milk (any milk is fine)
- 1/4 cup pure maple syrup
- 1 tsp. vanilla extract
- 1/2 tsp. maple extract
- 2 tbsp. (35g) white chocolate chips
Instructions
- Preheat oven to 350F.
- Mix flour, protein powder, stevia, baking powder, and cinnamon. In a separate bowl mix Greek yogurt, egg, maple syrup, milk, vanilla extract, and maple extract.
- Combine wet and dry ingredients. Gently fold together until a thick batter forms. Fold in 1/2 of the white chocolate chips. Spray a muffin tin with nonstick spray. Scoop the batter into 8 spots in the muffin tin.
- Sprinkle the remaining chocolate chips over the top of each muffin. Bake for about 12-14 minutes or until a knife comes out clean. Enjoy!
