When my mom and I were at the store the other day we ended up getting a bunch of strawberries. A bunch as in like 3 containers worth. I figured I might as well use them up by putting them in a recipe. I opted for chocolate strawberry truffles since I haven’t made any truffles in a while.
I made the actual truffle last night and let it sit in the fridge overnight to set. It makes it much easier to roll into balls if you let it sit. Otherwise, the dough will be sticky and too soft. To make it, I basically just added everything into a food processor and blended it up until smooth.
There is nothing unhealthy about these babies. Just oat flour (or protein powder), coconut flour, fresh strawberries, almonds, almond butter (or other nut butter), and I even added some strawberry jelly for a little extra strawberry kick.
After the dough chilled, I rolled it into balls and coated it in dark chocolate. You can use whatever chocolate you like, but I happen to love the taste of dark chocolate.
Healthy Chocolate Strawberry Truffles

These healthy chocolate strawberry truffles have the perfect sweet and creamy strawberry filling that is dipped in decadent dark chocolate to make the perfect combination of flavor!
Ingredients
- 8 large strawberries, w/ stems cut off
- 1/4 cup coconut flour
- 6 tbsp. oat flour (or 1 scoop protein powder)
- 2 tbsp. granulated sweetener
- 1/4 cup almond butter (or other nut butter)
- 1/2 cup whole almonds
- 2 tbsp. strawberry jam
- 1 tbsp. pure maple syrup
- 1/2 cup dark chocolate chips
Instructions
- Add all ingredients except for dark chocolate to a food processor. Blend until a smooth thick batter forms. Spoon batter into a bowl. Cover and refrigerate for a few hours or overnight.
- Once truffle dough has chilled, bring a small pot of water to boil. Put a glass bowl over top to create a double boiler. Melt chocolate in double boiler. Alternatively, you can just melt chocolate in the microwave.
- Roll dough evenly into about 1 inch truffles. Dip each in the melted chocolate and place on a baking sheet lined with wax paper. Let completely cool so chocolate can harder. To speed this up, place in the refrigerator for about 20-30 minutes.
