I can’t believe 2018 is already over. It seemed like it was just getting started, and here we are in January of 2019 now. To be honest, not much has changed. Not new year, new me. I’m still a little too obsessed with anything involving chocolate or peanut butter ;). I guess that’s not really too bad when it’s something healthy and delicious, which is why I made this Chocolate Peanut Butter Protein Oat Parfait.
This is using the brand new Ascent chocolate peanut butter flavor of their native fuel whey protein. It’s a product that I have used for a while now, and I absolutely love it. However, it is safe to say I love it even more now that they came out with this chocolate peanut butter flavor.
I am writing this from Fort Myer’s Beach in Florida. I am here training while I’m on Christmas break from college. It is so nice to be able to ride outside and not have all the freezing temperatures to deal with. I’ve been eating plenty of good food, including my grandma’s peanut butter pie, and of course this chocolate peanut butter oat parfait.
Since I made a couple of them, I was able to share one with my grandparents. They absolutely loved it, and didn’t even know it was healthy at first. You can’t beat that! It is the perfect breakfast to start your day right with delicious, healthy fuel.

Chocolate Peanut Butter Protein Oatmeal Parfait

Serves: 2 servings
Delicious layers of chocolate peanut butter protein oatmeal and creamy peanut butter vanilla yogurt to make the perfect, healthy breakfast treat.
Ingredients
- 1 cup oats, uncooked (old fashioned, or quick)
- 2 cups milk or water
- 2 tbsp. dark chocolate chips
- 1 scoop Ascent chocolate peanut butter whey protein powder
- pinch of salt
- 1 1/2 cups Vanilla Greek yogurt
- 2 tbsp. natural creamy peanut butter*
- extra chocolate chips for topping
Instructions
- Cook oats in milk or water in the microwave. Add chocolate chips, protein powder, and pinch of salt. Mix. Place in fridge/freezer for about 10-15 minutes to cool.
- Mix vanilla Greek yogurt with peanut butter until smooth.
- Alternate layers of chilled chocolate oatmeal and peanut butter yogurt mixture into two glasses. Top with some extra chocolate chips if desired. Enjoy!

Notes
*To make the recipe lower fat, you can use defatted peanut flour instead of the regular peanut butter. [br]**This recipe could easily be divided into 3 or even 4 servings. I just decided to make two, larger, breakfast sized servings.

Yes, I have. Sometimes I use it for the delicious peanut butter flavor but to keep the fat/calories lower!
