I have to say, it has been a pretty dang good week. I went down to the beautiful hills of Brown County on Tuesday for a nice 5 hour ride with a friend. Then, yesterday I just went on a couple hour easy ride downtown and stopped for coffee. Twice! And to go along with all the riding it has been like 75 degrees every day so I have no complaints right now!
So, to make this week a little better I made one of my new favorite baked oatmeal recipes to date. Healthy pumpkin chocolate chip protein baked oatmeal. What is not to love about oats, creamy pumpkin, and copious amounts of chocolate chips. There are actually three kinds of chocolate chips in here. Dark chocolate chips, white chocolate chips, and pumpkin chips.
I think I will definitely be making this recipe a few more times this fall. My dad really loved it. And of course I might want to make it for the rest of my family when they come in town for thanksgiving. It could be the perfect healthy start to your Thanksgiving before a day full not so healthy eats.
Pumpkin Chocolate Chip Protein Baked Oatmeal

Warm pumpkin protein baked oatmeal filled with 3 types of chocolate chips. It has a delicious cinnamon spice flavor perfect for fall.
Ingredients
- 1 cup (80g) old fashioned oats
- 2/3 scoop (23g) vanilla whey protein powder
- 2 tbsp. granulated stevia or erythritol
- 1/4 tsp. pumpkin pie spice
- 1/4 tsp. cinnamon
- 1/2 tsp. baking powder
- 1/2 cup (122g) pumpkin puree (NOT pie filling)
- 5 tbsp. milk (any milk is fine)
- 1 whole egg
- 1/2 tsp. vanilla extract
- 1/2 tbsp. (10g) dark chocolate chips
- 1/2 tbsp. (10g) white chocolate chips
- 1/2 tbsp. (10g) pumpkin chips (or more white or dark chocolate chips)
Instructions
- Preheat oven to 400F. Mix oats, protein powder, stevia, pumpkin pie spice, cinnamon, and baking powder in a bowl. In a separate bowl mix pumpkin, milk, egg, and vanilla extract. Combine wet and dry ingredients. Fold in chocolate chips.
- Spray a glass mini loaf pan or oven safe bowl with nonstick spray. Pour batter into loaf pan. Sprinkle with a few extra chocolate chips on top.
- Bake for about 30 minutes or until a knife comes out clean. Let cool, cut into two pieces and enjoy!
