I posted this one on my Instagram late last week, and it seemed to be a hit. You guys all said you wanted the recipe, so I am finally getting around to getting it posted. It is the perfect combination of creamy pumpkin protein oats topped with chocolate chips and a pumpkin chocolate chip protein donut, because who doesn’t want a donut on their oatmeal?
I was pretty busy all weekend in Richmond, Virginia with the cycling team I am going to be riding for next year. Lots of riding, laughs, and of course good eats! That is why I’m a little delayed in getting this one posted.
I’m not going to lie, when I made this last week, I actually ate it for dinner. Breakfast for dinner > dinner for breakfast! I had a pretty hard workout the next morning, so I wanted to make sure to fuel up. It is perfect because it has the complex carbs for fuel and still tastes like you are eating dessert.
If you saw the video on Instagram, you probably saw how creamy and thick the oats are. I make them super thick by adding a couple egg whites, whisking them in and microwaving. Basically, I cook the oats according to the package directions. Then, I whisk in 2-3 egg whites, and microwave for another 45-60 seconds. The egg whites cook and fluff up the oatmeal.
I topped the oats with chocolate chips (I used sugar free ones from ChocZero), then a big dollop of Nuts-N-More Spiced Pumpkin Pie protein peanut butter (use link, or code “MACROCHEF” for 15% off), and finally a keto pumpkin chocolate chip donut from Paleo Bake House.
