Ahh good ol’ pancakes. They never get old. If I had the time, I would probably make a huge stack of extravagant protein pancakes every day. These chocolate coconut peanut butter protein pancakes definitely did not disappoint. Have I ever mentioned how much I like chocolate and peanut butter???
Well, these pancakes definitely gave me my chocolate and peanut butter fix. And the addition of coconut made it all a little better. Coconut and chocolate together is another one of my favorite combos. I have a lot of favorites don’t I??? Haha.
The pancakes were a chocolate coconut base. I used chocolate casein protein in them and the casein protein helped to keep the pancakes super moist. Then, I topped the pancakes with Mighty Nut peanut butter, white chocolate coconut butter, shredded coconut, and a few chocolate chips for good measure.
Chocolate Coconut PB Protein Pancakes

These fluffy chocolate coconut protein pancakes are moist, delicious, and topped with white chocolate coconut butter, peanut butter, coconut flakes, and chocolate chips.
Ingredients
- Chocolate Coconut Pancakes
- 1/2 cup oat flour (or other flour of choice)
- 1 scoop (30g) chocolate casein protein powder
- 1 tbsp. unsweetened cocoa powder
- 1 tbsp. granulated stevia/preferred sweetener
- 1/2 tsp. baking powder
- 1/2 cup milk (any milk is fine)
- 1/4 cup (85g) canned pumpkin puree*
- 1/4 cup yogurt (or more pumpkin, applesauce, etc.)
- 1 whole egg
- 1/8 tsp. coconut extract
- Toppings
- 1 tbsp. Sweet Spreads white chocolate coconut butter
- 2 tbsp. Might Nut peanut flour (mixed with water)

Instructions
- Preheat pan or griddle to medium/high heat. Mix flour, protein powder, cocoa powder, stevia, and baking powder. In a separate bowl, mix milk, pumpkin, yogurt, egg, and coconut extract.
- Combine wet and dry ingredients. Spoon batter onto griddle to make 4 even sized pancakes. Cook for about 3 minutes per side.
- Top pancakes with coconut butter, peanut butter, coconut flakes, and chocolate chips. Enjoy!
