I came home from my bike ride today and guess what I was craving? Chocolate. I know it probably comes as a surprise because I don’t like chocolate at all. I hope you are sensing my sarcasm. I would probably die if it didn’t have chocolate. These double chocolate toffee protein pancakes definitely sufficed my need for chocolate!
A couple days ago I received a huge box of chocolate from Amber Lyn chocolates. I got sugar free dark, milk and white chocolate chunks as well as a box of assorted dark chocolate bars. One of the chocolate bars was dark chocolate with toffee. I figured if I have a toffee flavored chocolate bar then I might as well make chocolate toffee pancakes.
It worked out good as well that I have a bunch of different Nuts N More peanut butters. One of the flavors I recently opened was the toffee crunch peanut butter which is amazing. With all this toffee flavor going on, it just wouldn’t be right not to make pancakes with the toffee flavor.
One of the things that gave these a really good chocolate flavor was the chocolate milk combat protein powder. It is without a doubt the best chocolate protein powder I have had. I also made a chocolate caramel sauce to top them with. It was really easy to make and no refined sugar. You just need pure maple syrup, cocoa powder, stevia, and caramel extract.
I went to another race this weekend and it was in in Lexington, Kentucky this time. It was another great weekend of racing and thank goodness there wan’t any crashes!
