I love protein bars. They are so convenient and ready whenever you need them. That’s what is so great about these lemon coconut protein bars. Make them, slice them, and they are in the fridge/freezer for whenever you need a healthy protein packed snack.
I do eat packaged protein bars quite a bit too. There are some different ones that have pretty good nutrients and ingredient profiles. I can no longer eat any of those protein bars with sugar alcohols and artificial sweeteners. They just mess up my stomach. However, with these, there is absolutely nothing artificial about them. No sugar alcohol, no preservatives. Just pure tasty goodness.
And, not to mention, the price of packaged protein bars can get quite expensive. Occasionally when I’m in a crunch I will grab the $2-3 bar from the store or gas station, but who wants to do that every day? You can make a nice batch of homemade ones for almost the same price as a single bar from the grocery!
So, if you are like me and love your protein bars, give these babies a try. The combination of subtle lemon flavor from the lemon sorbet whey protein, and the coconut make for the perfect refreshing snack. Also, be sure to check out my chocolate peanut butter no-bake protein bars which are also amazing!

Notes
*Can use unsweetened coconut as well for less calories/sugar. However the sweetened adds a nice subtle sweetness to the bars that pairs well with the lemon flavor. Alternatively, use unsweetened coconut, use a few tbsp. less milk, and a few more tbsp. maple syrup for a similar flavor profile without the sweetened coconut.
