If you are dieting, then you have probably heard of protein fluff before. So much volume, low carb, tastes amazing, and packed with protein. So much about dieting is eating the right things. Just because you are restricting your calories doesn’t mean you need to be hungry… so this is why I came up with this Low Carb Protein Fluff.
The flavor of this one is actually a Berry PB Low Carb Protein Fluff
One of my favorite things about protein fluff recipes, and such, are that you can customize them to your liking and make so many different yummy flavor combos.
I will admit, I used a pretty shocking secret ingredient to help increase the volume of this recipe while still keeping it low carb and low calorie. Any guesses what that secret ingredient is?
Cauliflower
What? I know it sounds crazy, but trust me. You don’t taste it. I have been adding cauliflower to my smoothies lately and love how it adds thickness, volume, and a cheeky serving of vegetables. So, I figured why not add it to my protein fluff? It turned out awesome.
It is kind of like my recipes using black beans or garbanzo beans. For example, these black bean brownies are one of my all time favorite brownie recipes, and I’ve given them to people and they had no idea they were even healthy. It’s always nice to be able to sneak some extra veggies/fiber into recipes without people knowing it.
Flavor variations
Like I mentioned above, I made this one a berry peanut butter flavor. This is because I used frozen berries, strawberry cream protein powder, and peanut flour in there. Of course, you could use frozen banana instead of berries and make it peanut butter banana.
Then, when it comes to the different protein powders, the combinations are endless. I think my next one I am going to make a chocolate peanut butter banana flavor combo using my chocolate peanut butter cup whey protein, frozen bananas, cocoa powder, and peanut flour.
Anyway, if you are looking for maximum volume and minimal calories, this is the recipe for you. In total, the recipe makes about 1050 grams of protein fluff. 100 grams, or about 2/3 cup, is just 90 calories, 12 grams of protein, 7 carbs, and 2 fat. You can’t beat that!
Food processor
The best way to make it is using a food processor. I like a food processor for making this because it gets super thick and can be difficult for a blender to mix up. The food processor has bigger blades and works perfectly. Of course, if you don’t have one, you can use a blender. You will likely just need to stir it pretty often using the plunger. The food processor I use is this Cuisinart one, which I have had for about 6 or 7 years and absolutely love it.
Final note for making this: Xantham Gum
So, as you have probably seen in a lot of my smoothie recipes, I use xantham gum. It is a thickening agent often used in gluten free baking. It is what makes this fluff, well, super fluffy and thick. I used 1 tbsp. for the whole batch. You don’t need a lot at all. For example, when I make single serve smoothies, I add about 1/2 tsp. Some people don’t do well with xantham gum and say it gives stomach issues, so I have heard of good results using this Not Xatham, Not Guar Gum thickener. I haven’t personally used it, but it would be a great alternative to xantham gum.
