It is probably pretty obvious by now that I have all about the coffee flavored recipes lately. I can’t get enough coffee. I will take it anyway I can get it, especially if it’s in the form of this delicious and creamy peanut butter coffee protein chia pudding.
Like a lot of my recent recipes, it uses the new Ascent cappuccino casein protein powder. They have had the cappuccino whey out for a bit, but the new casein opens up a whole new realm of delicious, coffee flavored, and protein-packed recipes!
Of course, this recipe also goes well with my addiction to peanut butter. I’ve done the peanut butter and chocolate combination quite a bit (like these chocolate peanut butter protein donuts). However, to be honest, peanut butter and coffee could be one of my new favorites.
This recipe is super easy and protein packed. It has cappuccino casein protein powder, Greek yogurt, peanut butter, chia seeds, and almond milk. That is all you need for a simple, and delicious coffee peanut butter protein pudding. Just mix everything together and let it chill in the fridge so the chia seeds can make it thicken and then you have yourself a delicious treat!
- 2 scoops [url href=”http://bit.ly/MacroChefMCC” target=”_blank”]Ascent cappuccino micellar casein protein powder[/url]
- 3 tbsp. natural, creamy peanut butter
- 2/3 cup coffee flavored Greek yogurt*
- 3 tbsp chia seeds
- 1 3/4 cups milk (I used unsweetened almond)**
- Coffee grounds optional (decaf or regular)
- Add all ingredients to a blender or food processor. Pulse a few times until all ingredients are well incorporated with each other. No need to blend very long. Can also whisk everything together in a bowl, but it is quite thick and easier in a blender.
- Divide into 6, half-cup servings. Top with additional peanut butter, coffee grounds, or just eat as is. Enjoy!
