This is a recipe that I have been wanting to perfect for quite some time. I am a huge fan of Rice Krispies treats, and they are often one of my go-to foods when I am out training on my bike. However, I figured I might as well make a protein-packed, macro-friendly version with these Protein Rice Krispies.
Protein Rice Krispies
This certainly took a few trials to get the perfect Rice Krispie texture that didn’t skimp on flavor, but was packed with protein!
Shall we go through a few key things to make these delicious, protein-packed and macro-friendly?
MACRO1 Nutrition ONE Protein (BEST whey + casein blend protein!)
As you are starting to see, this and pretty much all of the other more recent, protein packed recipes use MACRO1 Nutrition (formerly Macro Supps) ONE Protein. This is my personally company that I started to make the BEST baking and cooking protein on the market.
I have been doing this for quite some time now, and I didn’t want to settle for another whey + casein blend protein. So, I made my own brand. The #1 goal was to make the BEST tasting, BEST baking protein on the market, and with all the 5-Star reviews so far, I can assure you we have done just that.

You also need to use light butter
One of the key things to give that original Rice Krispie flavor is the butter. But, regular butter has over 100 calories per tbsp. So, I like to use light butter in my recipes that call for the distinct buttery flavor. Light butter (either I can’t believe it’s not butter, or other brands found in the butter section at a grocery) have about 4g and less than 40 calories per tablespoon.
Lastly, you know I had to do a chocolate topping.
Chocolate protein topping
It wouldn’t be a MacroChef recipe without some chocolate would it? Seriously, I always find an excuse to add chocolate to just about anything.
It is a combination of…
- Dark chocolate chips (melted)
- Almond milk (or preferred milk)
- Chocolate Brownie ONE Protein
You just melt the chocolate chips, then add the milk to make a ganache. Finally, add the protein powder and mix quickly. Spread over top of the cooled rice krispie treats and let chill before cutting.
I guess I should also briefly talk about the steps of making the rice krispie treats.
Protein Rice Krispies ingredients
- Rice cereal (duh!)
- Marshmallows (also duh!)
- Light butter
- ONE Protein, vanilla ice cream flavor
- Pinch of salt (optional but helps bring out the sweetness)
Step 1:
Heat the marshmallows and light butter in a large, microwave safe bowl. Shouldn’t take much more than a minute depending on the power of your microwave. Check after 30 seconds and microwave for 30 second intervals.
Step 2:
Add protein powder, pinch salt, and vanilla extract to the melted marshmallow / butter mixture. In a large bowl, add rice cereal. Pour melted marshmallow mixture over top. Stir together until combined and sticky.
Step 3:
Press the mixture into a loaf pan / dish lined with parchment. Flatten down until even and then place in the fridge for about 30 minutes (or freezer for about 15 minutes) to chill and set up.
Step 4:
Make the chocolate ganache as prescribed in the recipe. Spread over the protein rice krispies, add a sprinkle of crushed candy cane (because Christmas!), and then cut into 8 squares and enjoy!
