I am finally back from Tucson after an amazing few weeks of training out at Cinch Cycling Camp! I already miss the sun, mountains, and warm weather. But, it’s time to get back to work on recipes and training indoors until my next race in Phoenix in a couple weeks.
Waiting for me when I got home were some Good2Go protein bars. I have to honestly say, they might be some of the best protein bars I have ever had. Not just from the taste, but also the texture and the high quality ingredients they use. They have to be refrigerated which makes sense because they don’t use any crazy artificial ingredients!
The first bar I had the chance to try is the almond chocolate chip bar. It inspired me to make these almond butter chocolate chip protein waffles.
I used Beast Sports Nutrition vanilla protein in the waffles and then folded chocolate chips into the batter. Then I topped them with some more chocolate chips, Good2Go almond chocolate chip protein bar pieces and a little drizzle of 100% pure maple syrup.
Almond Butter Chocolate Chip Protein Waffles

Delicious golden brown protein waffles filled with mini chocolate chips and topped with natural creamy almond butter, more chocolate chips, chocolate chip almond protein bar pieces and a little drizzle of pure maple syrup.
Ingredients
- 1/2 cup whole wheat flour (or oat flour)
- 1 scoop Beast Sports vanilla protein powder
- 1/2 tsp. baking powder
- cinnamon to taste
- stevia/sweetener to taste
- 1 whole egg
- 1/3 cup vanilla Greek yogurt
- 2 tbsp. milk (any milk is fine)
- 2 tbsp. natural creamy almond butter
- 1 tbsp. mini chocolate chips, divided
- 2 tbsp. pure maple syrup
- 1/3 Good2Go almond chocolate chip protein bar
Instructions
- Preheat waffle iron to medium heat. Mix flour, protein powder, baking powder, cinnamon and sweetener. In a separate bowl, whisk together egg, milk, and Greek yogurt.
- Gently stir together wet and dry ingredients. Fold in 1/2 of the chocolate chips. Spray waffle iron with nonstick spray. Pour batter into waffle iron.
- Cook for about 4 minutes or until golden brown. Chop protein bar into small squares. Top with almond butter, remaining chocolate chips, protein bar pieces and pure maple syrup.
