After not having pancakes for quite a while I decided to make them today after my ride. I pretty much spent my whole ride contemplating on what kind I wanted to make. Sometimes figuring out which which flavor of waffles to make can be a very tough decision! :) When my dad and I got back from riding, he reminded me that we had a bunch of strawberries in the fridge. I figured why not make chocolate covered strawberry protein waffles?
I recently got an awesome package from Shredz with 5 different tubs of protein. They sent me blueberry muffin, cinnamon bun, vanilla, chocolate, and chocolate peanut butter. I have not tried all of the flavors yet, but if they are as good as the chocolate and vanilla, then I surely will not complain.
The recipe made four big Belgian waffles. Two would easily be enough to fill you up, but I went ahead and ate all four! When it comes to chocolate waffles, I simply cannot get enough. I also drizzled them with some homemade dark chocolate sauce and some Amber Lyn sugar free milk chocolate. The milk chocolate paired with the dark chocolate was perfect.
I think my favorite part about the waffles was the strawberry jam compote that I made for the top. I have never made it before, but it ended up being really easy to make. I just added about a cup of strawberries to a pan and added 3 tbsp. of maple syrup. Just let it simmer for about 10 minutes or so until the strawberries get really soft and infused with the syrup. When it cools, it gets a jam texture and tastes just like strawberry jam!
I am off to Ohio for another race tomorrow, and I can’t wait. It is a 60 mile road race and the weather is supposed to be nice and sunny, so it should be great. Hopefully these waffles will give me the fuel I need to do well in the race!
