Soooo since it is Valentine’s Day, I had to do something Valentine’s themed. The two best things I could think of were red velvet and chocolate. I also really enjoy waffles, because waffles are like pancakes with abs. Anyway, we ended up with these…
Red Velvet Protein Waffles
They are super easy to make, thanks to using store bought red velvet cake mix. I know, I know. Store bought cake mix has sugar and refined flour and all the things that are terrible for you. However, it simplifies this recipe, tastes amazing, and has none of the added butter and sugar that an actual red velvet cake would have.
And…. I only used 1/4 cup of the mix for 2 servings of waffles!
Chocolate Chips
They are not a must, but I highly suggest them. Since when can you ever have too much chocolate?
Also, you will see down below that I add even more chocolate. This is simply made by mixing the following:
- unsweetened cocoa powder
- SWERVE powdered eryhtritol sweetener (basically sugar free powdered sugar)
- water
Anyway, back to the red velvet protein waffles…
Cook on medium/high heat for 6-7 minutes
If using whey protein, cook for less time and pay attention to the recipe notes ab out using less almond milk. Whey absorbs less liquid than casein, and also dries out easier when cooking. I use this casein protein! Chocolate or vanilla is fine.
Then, they should look like this.
Drizzle with chocolate sauce (mentioned above!)
And…
Since it is Valentine’s Day, I threw a Reese’s Heart on top before devouring! Completely optional, but also completely amazing!
